Gingerbread Oatmeal Cookie Recipe

 

 Gluten-Free Oatmeal Gingerbread Cookies

The Goods

  • 1/2 cup unsalted butter

  • 1/2 cup coconut sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup blanched almond flour 

  • 1 1/2 cup old fashioned rolled oats

  • 2 teaspoons ground cinnamon

  • 2 teaspoons ground ginger 

  • 1/2 teaspoon nutmeg 

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

Let’s Get Started

  1. Cream together the butter, coconut sugar, egg and vanilla. Use electric mixer or whip it with a whisk

  2. Once combined, add almond flour, oats, spices, salt and baking soda

  3. Mix again until combined 

  4. Chill the dough for 30 minutes- important step!!

  5. Preheat oven to 350 degrees

  6. Use a cookie scooper to scoop 8-12 cookies out on a baking sheet lined with parchment paper

  7. Use your fingers to flatten the tops of the cookie dough balls- bake for 10 minutes

  8. Allow cookies to cool on baking sheet 10-15 minutes before you transfer them to a cooling rack or plate

  9. Sprinkle the tops with flakey salt and/or ground cinnamon and enjoy!
